Artisan Speck from Alto Adige: 10 Months of Ageing
Speck: you can taste the time
Ten months of ageing. The authentic flavour of the meat. Some products need time to become what they are. Our artisan speck comes from Alto Adige and is made using a process that respects the natural pace of maturation.
It is genuinely aged for ten months, without forced-air drying to speed up the process. The result is full, distinctive meat flavour, soft and creamy sweet fat, and delicate smoking that supports the taste without overpowering it. A great speck should not taste only of smoke: first and foremost, it should taste of the meat.
A tradition of meat, spices and patience
Speck is one of the most recognisable products of Alpine food tradition. Its character comes from the meeting of two preservation methods: salting and curing, combined with gentle smoking. Pork legs are selected, deboned and prepared; the meat is salted and seasoned with a spice blend that helps define its character. Smoking adds aroma but should never hide the flavour of the meat.
Ten months of ageing: the value of waiting
Our speck is matured for ten full months. During this slow process, the meat gradually changes, flavours become more concentrated and aromas come into balance. We do not use forced-air drying to shorten the maturation. Time is not just a production detail: it is part of the quality you can taste.
The fat: a sign of balance and sweetness
In our speck, the fat is soft, creamy and gently sweet. It is not something to remove: it is an essential part of the balance between the savoury meat and the overall texture. A well-made speck is not simply lean; it should find the right balance between meat and fat.
Smoking: it should complement, not cover
The aroma of smoke is part of what makes speck recognisable, but it should accompany the meat rather than dominate it. In our selection, the smoke is present while leaving room for the meat, spices and sweetness of the fat. The result is a savoury, well-balanced flavour in which smoking is not the only thing you remember.
Artisan and industrial methods
Speck can differ in production methods, ageing times and sensory profile. Some large-scale processes are designed for shorter cycles, consistent results and high volumes; accelerated drying may also be used. Our speck follows a different approach: ten months of maturation without forced-air drying and delicate smoking.
We do not claim that every industrial speck is the same, or that the word “artisan” alone guarantees quality. What matters is the actual method, the time and the taste. This is why we prefer to explain the specific features of the speck we have selected for Maso dei Sapori.
How to recognise and enjoy good speck
Look at the colour of the meat and the distribution of the fat. Smell the slice and notice the aromas of meat, spices and smoke. Then taste it slowly: the meat should remain at the centre, while the fat adds softness and balance. The smoke should be noticeable but never dominant.
Try it on its own, thinly sliced and left at room temperature for a few minutes. Afterwards, pair it with rustic bread and a mountain cheese. This is a simple way to appreciate the different layers of flavour.
