Trentino and alpine cheeses in Mezzana in Val di Sole
Trentino and alpine hut cheeses in the heart of Val di Sole
At Maso dei Sapori, in Mezzana, we offer a selection of Trentino cheeses, alpine hut cheeses, and dairy specialties chosen from local dairies, mountain huts, and producers.
Our selection is not always the same. It changes throughout the year based on the season, availability, and the production of the dairies, because we prefer to choose products that truly convince us rather than always having the same cheeses on the shelves.
Cheeses from Trentino
At our counter, you can find typical Trentino cheeses that are very different from one another: from the most delicate and young to the most aged, intense, and flavorful varieties.
We pay special attention to cheeses that truly tell the story of the mountains and the Trentino dairy tradition.
Among these, the Casolet of Val di Sole is a must, as it is one of the most representative cheeses of our valley, along with various products from local dairies and mountain huts.
Alpine hut cheeses
Alpine hut cheeses (formaggi di malga) are among the products we are most passionate about.
Their characteristics can change based on the specific mountain hut they come from, the season, the animals' diet, and the aging period.
Precisely for this reason, two seemingly similar cheeses can have completely different aromas, textures, and intensities.
And that is also what makes tasting, comparing, and describing them to our customers so interesting.

25 years of research and training
When we opened Maso dei Sapori 25 years ago, Max was 23 and Elisa was 21.
We were very young and still had so much to learn.
Over the years, we have used the off-season periods to visit producers, dairies, and artisanal establishments, learn about production methods, taste cheeses, and learn to recognize the differences between one production and another.
We didn't just want to sell cheese.
We wanted to get to know them so we could choose and recommend them better.
After 25 years, we feel we have reached a very high level of selection, but we continue today to search for new producers, taste, and learn.
Small dairies, mountain huts, and producers
An important part of our selection comes from local businesses and small-scale producers.
Some products are only available at certain times of the year or in limited quantities.
For this reason, if you visit the shop at different times of the season, you might find different cheeses.
For us, this is not a limitation: it is part of the beauty of artisanal and mountain products.
Fresh, aged, and great tasting cheeses
Our selection includes fresh, semi-aged, and aged cheeses, suitable for daily consumption, a Trentino charcuterie board, an aperitif, or a tasting.
If you are looking for something specific, tell us what kind of cheese you like.
We can help you choose and also suggest pairings with speck and cured meats, honey, jams, wines, or grappas.

Taste before choosing
Whenever possible, we like to let customers taste our products.
Especially when it comes to cheese, an explanation is helpful, but often a small taste tells you much more.
It is a part of our work that we particularly enjoy: helping those who come into Maso dei Sapori discover something they might not have known before.
